Food has always been an essential that keeps us alive apart from sleep, water and of course Oxygen. Many of us consider our meals to be extra tasty than healthy but unfortunately which is very dangerous. Anyways it won’t hurt to see some fat and sugar gulping down our throats with precaution. Correct combination of nutrients and right amounts of everything is bound to shove you healthy benefits in your latter years.
As we all know water is a fortune when it comes to glowing skin and correct functioning of most of our body organs. A little less fat and salt with some vitamins and proteins mixed with carbohydrates is what we usually need. So why not try something simple yet satisfactory to the tummy?
Rice is a good choice to start with and 2 or 3 curries would be the key to make it simple. So I thought of writing about a fantastic meal I had today which I think had most of the nutrients I need and the satisfaction for my taste buds.
Prawn rice with Chili chicken, mixed salad
Ingredients
· 200g white rice of your choice
· 175g green peas
· 2 tbsp oil , plus a drop extra
· 1 onion, chopped
· 1 tbsp tikka masala curry paste (garam masala is ok)
· 250g peeled tiger prawns
· 1 egg beaten
· 1 tbsp soy sauce
Method
1. wash well and simmer the rice of your choice as you do normally for 10 minutes and add the green peas in last 3 minutes and (ask mom to help with this because I always get wrong when it comes to rice)
2. Take well washed prawns and add a pinch of salt, pepper, 1 tea spoon of soy sauce and mix and keep for 15 minutes.
3. While the rice is cooking, heat the 2 tablespoons of oil in a large frying pan or wok. Add the onion and stir fry for 3-4 minutes, until the onion starts to turn golden. Stir in the curry paste and cook for a few seconds, then tip in the prawns and heat them through for a minute or so.
4. Push the prawn mixture to one side of the pan and add the drop of oil to the other side. Pour the egg into the oil; stir until cooked like scrambled eggs, then mix into the prawns. Add the rice and peas and mix well. Finally add 1 table spoon of soy sauce and some salt not too much and pepper. Serve immediately.

Mixed Salad
Ingredients
- 2 large onions cut into cubes
- 1 small cucumber or zucchini cut into cubes
- 4-5 cherry tomatoes or 2 large tomatoes cut into cubes
- 10-12 leaves of lettuce
- 1 carrot cut into cubes
- 10-12 leaves of cabbage cut into thin and long stripes
- A pinch of salt and pepper
- Juice of a lime
Method
Combine all the ingredients and serve.
Chili chicken
Ingredients
500-600gms. boneless chicken (cut into1-inch cubes)
2 tbsp Soy sauce
1 onion chopped
2 cloves of garlic chopped
1 inch of ginger chopped
Some curry leaves
3 tbsp red chili powder
1 tbsp curry powder (garam masala is ok)
Salt to season
1 tbsp vinegar
2 tbsp lime juice
3 tbsp coconut oil or olive oil
1 inch long cinnamon bark
Water
Method
- Take chicken and add 1 tea spoon of salt, lime juice, curry powder, soy sauce, chili powder and vinegar and mix well and keep for about 20 minutes to season.
- Take a pan with depth and add oil and when it is heated add garlic, onion, cinnamon, ginger and curry leaves.
- When onion is golden brown add the chicken and let it fry for 2-3 minutes. (do not wash the vessel you used to season)
- When you get an appetizing aroma add 1 ½ cups of water to the vessel you used to season and get the remaining seasoning to mix with water and then add it to the chicken.
- Let it simmer for 10-15 minutes lid closed and serve hot.
