Legendary Cooking Recipes In SL style.....

Howdy all the food friends!!!! Already into the weekend and any food plans??? I bet you'd love to try some old fashionable dishes with a country style from our very own Sri Lanka. While looking for some interesting recipes I happened to cross a book written on true life experiences of the most famous chef of Sri Lanka; Pabilis Silva from Mt. Lavinia Hotel. For those of us who live in SL, this name is not at all unfamiliar. Chef Pabilis is actually can be called as the path finder of a long lost secrets of cookery in our country. With the rapid modernizing world which is  basically fueled by burgers and chips, the classic dishes of this Maestro in the art of culinary are truly revolutionizing. For his work, service and artistic touch in his field, he was awarded and well recognized nationally and internationally. 
Running my fingers and thoughts trough the pages of his book, I found many unheard and unfamiliar recipes which I'm dying to try myself. It was even very hard to find pics of them. Here are some of the recipes I think you may find interesting. 


Bak Maha Fruit Salad
Ingredients
12 cloves of Waraka (well ripen jak fruit) 
10 Rose Apple (Pini Jambu)
4 Cashew Fruits
2 pala mada ( The pale yellow thing you find in a planted coconut)
2 mangoes
1/2 cups of Maa Dan
2 tbsp Sugar
juice of a lime

Method

  1. Cut all the fruits except Rose apple and maa dan into 1 inch cubes.
  2. Cut rose apple into 4 and mix all the other along with Maa dan, lime and sugar. Do not crush but mix slightly.
Walawwe Sambolaya
Ingredients
Scraped coconut 300g
Fried chopped onions 100g
2 tbsp powdered Maldive fish
10 dry chilies( roasted)
black pepper 1/2 tea spoon
juice of 2 lime
salt to taste

Method
  1. Mix all the ingredients except lime in a blender until powder and add lime to taste.
Cork Fruit Shake
Ingredients
12 Cork fruits
3 cups of water
1 cup of coconut milk
5 tbsp Sugar
salt to taste

Method
  1. Clean the cork, crush with water and sieve well.
  2. Add coconut milk, sugar and salt and chill before serve.
Wood Apple Ice Cream
Ingredients
500g wood apple
100g Sugar
200ml Cream
6 egg yolks or 2 tbsp Custard Powder
1/2 tea spoon of salt
4 cups of water

Method
  1. Crush the wood apple with 2 cups of water until you get a thick liquid and sieve well. Add two other cups of water to the mixture and allow to boil.
  2. Remove all the bubbles coming while boiling and add 100g of sugar until you get a somewhat thick mixture. Turn off the stove and let it cool.
  3. Mix the egg yolks with cream separately and add it to the earlier mixture.
  4. Allow the whole thing to cool, place it in the refrigerator and add it to an ice cream machine.
