Special Request Easy Lasagna Recipe!!

Howdy! First of all thank you everyone for all those lovely comments and thoughts on our Pizza recipe. Many have tried it and the outcome was fantabulous! These days, I'm in one of my moods of trying lots of  food and beverages. (No dieting at all!!!)  And add to that, one of my best friends who told me that she's going to try our Original Pizza Recipe, asked me to put up some wonderful and easy Lasagna recipes. Well who doesn't love that amazing Italian dish? As a person who adores all kinds of dishes, I highly recommend Italian as something you ought to try every once in a while. They are easy and with the touch of Olive oil and tomato, they are healthier too. So without further ado, here is the recipe. Enjoy!!!! :)

Easy Vegetable Lasagna Recipe


Ingredients
6 to 8 sheets of cooked Lasagna according to package instructions (available in super markets)
3/4 cup shredded mozzarella cheese
1/2 cup Tomato sauce or puree

For the vegetable mix
1 cup sliced mushrooms ( you can use button mushrooms if you like)
1/2 cup diced carrots
1/2 cup diced red and green bell pepper
1/2 cup chopped Onion
2 tomatoes diced
2 tbsp chopped Garlic
1 cup diced zucchini
1/2 cup green peas
1 cup broccoli separated into florets
1 teaspoon of Oregano
2 tbsp Olive oil

For the cheese sauce
2 cups of milk
2 tbsp flour
2 tbsp butter or margarine
1/2 cup shredded Cheddar cheese
salt and pepper to taste

Method
  1. Preheat your oven to 180 degrees Celsius and let it be. Heat the olive oil in a pan and add Garlic and Onion and let it cook for 2 minutes.
  2. The add the carrots, bell peppers, mushrooms, broccoli and green peas and mix well for another three minutes.Then add the zucchini and tomatoes and season with Oregano, salt and pepper.
  3. In a separate pan melt the butter and add the flour and cook for about one minute. Don't let it turn brown colour. Then lower the heat and add the milk and stir well and keep stirring for another two minutes. While doing that add the cheddar cheese and mix well until you get a thick sauce. Season with salt and pepper.
  4. Butter an ovenproof dish or a casserole dish and cover the bottom with Lasagna sheets and add the vegetables. The add the cheese sauce we prepared and add the tomato sauce on top of it. Then sprinkle mozzarella cheese all over and repeat this until your dish is full. Make sure you end up with vegetables, cheese sauce, tomato sauce and lots of mozzarella on top. From 6-8 sheets you could get around three layers.
  5. Bake for about 30- 40 minutes until the top is golden brown and bubbling. Let it cool down for 10 minutes before cutting pieces.





Please note that you can change the amounts of cheese and tomato sauce you use as you wish. More the cheese more it is good. 
If you want to make lasagna with chicken, sea food or any other meat, simply drop few of the vegetables mentioned here (mushroom, carrots, green peas, broccoli) and use the meat or sea food of your choice. About 1-2 cups would do. Make sure you season them with parsley, oregano, basil, salt, pepper, and tomatoes made into a curry and then add to the lasagna dish for extra taste.
