Bun Family.... Bun Recipes

I just love buns, don't you? Well, it's always handy to know one or two bun recipes to surprise your loved ones once in a while. There are tons of bun recipes and if you can remember we presented the recipes of hot dog, hamburger and submarine in Quick Bites post but I thought of presenting a few easy basic ones for you today. Hope you'll find them interesting!

Basic Bun Dough Recipe

Ingredients
1kg flour
20g dry Yeast
70g sugar
20g salt
10g baking powder
2 eggs
20g milk powder
100g Margarine
water to mix

Method
  1. Add all the ingredients except salt, eggs and margarine and mix well in a bowl by mixing in water from time to time until you get a stiff dough.
  2. Leave the dough for five minutes and add salt, knead well and keep aside for another five minutes.
  3. Add the two eggs and knead again and leave for another five minutes.
  4. Add the melted margarine, knead well and keep dough covered for 10 minutes. 

Fish Bun Recipe (Sri Lankan Style) 

Ingredients
The bun dough as made above
For the filling-
250g fish seasoned with salt and pepper and vinegar and then boiled
1kg boiled and mashed potato
salt and pepper to taste
juice of half a lime
1 grated medium sized carrot
1 finely cut leek
1 chopped large onion
1 tbsp chopped garlic
some curry leaves
3 tbsp sunflower oil
1 egg yolk

Method
  1. Heat a pan and put oil. Then add the chopped onion and garlic and curry leaves and temper until onions turn slightly pink.
  2. Then add the leek, carrot and mix well. Add the potato and fish then and temper for three minutes. Add salt and pepper to taste and finally when the fire is out put lime juice and mix well.
  3. Divide the dough into 80g portions, roll them with oil and leave to rise for another 10 minutes. Place the filling inside and roll them into triangular shapes. Beat an egg yolk and brush on top of the buns and leave to rise for 20 minutes.
  4. Bake at 180 degree Celsius for 10-15 minutes.


Sausage Bun Recipe
Ingredients
10-15 sausages
Dough as mentioned earlier
salt and pepper to taste
1 egg yolk

Method
  1. Divide the dough into 80g portions, roll them into rectangular shapes with oil and leave to rise for another 10 minutes. Place the seasoned sausages with salt and pepper and roll around the sausage to get a round shape.
  2. Brush beaten egg yolk and leave to rise for 20 miutes. Bake buns at 180 degree Celsius for 10-12 minutes.

Jam Bun Recipe

Ingredients
Dough as made earlier with increased amounts of 70g sugar to 100g and 20g milk powder to 30g milk powder
any flavoured jam
some sugar to sprinkle on top
1 egg yolk

Method

  1. Make the dough as mentioned earlier and divide into 100g portions and leave to rise for 10 minutes. 
  2. Roll out the dough balls with a little flour into large round shapes. Fill them with generous amounts of jam and fold the round shape to get a half circle shape. 
  3. Leave to rise for 15 minutes and fork the edges. Brush the top of the buns with beaten egg yolk and sprinkle with sugar. Bake for 10-12 minutes at 180 degree Celsius.
