Sandwich Meeeeeee..........

Who doesn't love a good fat sandwich with full of all the yummy stuff??? Well who says sandwiches are only for breakfast???? Sandwich can be a healthy breakfast or a superb snack or even a fantastic party crasher. So today we thought of having some sandwich ideas for you. Try them out. 


Egg Salad Parmesan Sandwich

Ingredients
6  hard boiled eggs, sliced in quarters
2  celery stalks, chopped finely
1/2  onion, chopped finely
1/2  cup salad dressing (or mayonnaise)
1/2  teaspoon Parmesan Cheese
1/4  teaspoon salt
1  tomato, sliced
4  lettuce leaves
8  bread slices, your choice of bread

Method

  1. Add the eggs, celery, onion, salad dressing (or mayonnaise), cheese, and salt into your mixing bowl and mix the ingredients.   
  2. Now, take about a tablespoon egg salad and spread on a slice of bread, add 2 tomato slices, a leaf of lettuce and top with an additional bread slice.
Grilled Cheese Sandwich
Ingredients
8  slices white Bread, toasted
4  ounces Cheddar cheese in size of bread
4  Tablespoon Butter

Method
  1. Arrange the cheese between the bread. Preheat griddle to 350 to 375-degrees F. 
  2. Butter the outside of the sandwich and place on a griddle and cook until golden brown.
  3. Turn over and cook until the second side is golden brown and the cheese starts to melt. Remove from griddle. 
Chicken Salad Sandwich

Ingredients
1  cup cooked chicken breast, diced
1/2  cup celery, diced
1/2  onion, diced
1/2  cup salad dressing (or mayonnaise)
1/2  teaspoon oregano
1/4  teaspoon salt
1/8  teaspoon pepper
1  hard-cooked egg, peeled
1  tomato, 8 slices
4  lettuce leaves
8  slices of bread (your choice of bread)

Method
  1. Add the cooked chicken breast, celery, onion, salad dressing (or mayonnaise), oregano, salt, pepper, hard-cooked egg into a food processor.  Pulsate food processor about 4 times.
  2. Spread chicken salad mixture on a slice of bread; add 2 tomato slices, a leaf of lettuce and top with second bread slice.
Italian Vegetable Focaccia Sandwich
Ingredients
1  round Focaccia bread (10 to 12 inches in diameter)
2  cups shredded Mozzarella cheese (8 ounces)
2  cups deli marinated Italian vegetable salad, drained and coarsely chopped

Method
  1. Sprinkle bottom half of focaccia with 1 cup of the cheese. Spread vegetables over cheese.
  2. Sprinkle with remaining cheese. Cut into wedges.
Roasted Veggie Wraps

Ingredients
2  quarts thinly sliced zucchini, Carrots, Mushrooms, Onions and/or Red Bell Peppers
1  Tablespoon Olive Oil
1/4  cup Mayonnaise
3  cups fresh Spinach leaves
1  small clove Garlic, finely chopped
2  Tablespoons grated Parmesan Cheese
6  flour Tortillas (6-in.)

Method
  1. Preheat oven to 450-degrees F. On large baking sheet, toss vegetables with olive oil.
  2. Roast for 12 minutes or until vegetables are almost tender. In food processor or blender, blend mayonnaise, spinach, garlic and cheese until smooth. 
  3. Evenly spread tortillas with spinach mixture, then top with vegetables and roll up.
