Hey folks, it's been a while since my last update due to unavoidable circumstances anyways, first and foremost I wish you a very happy new year!!!!! So it's 2012 and what can we ask more??? Let's say this year, we are trying to make ourselves available for more and more joyous activities. Therefore, one should be able to get over all the sufferings and pains. I know for some, this could be a new beginning after a long period of suffering so, in my opinion, food is the best remedy for it. Mainly it would be chocolate based recipes. They are simple and quick and they are the quickest to get into our mind. And it's just not only food but Suffer Reversing Suppers!!!! Let's see what we have got on our menu today!!!!!!
Chocolate Mousse Recipe
Ingredients
1 3/4 cups whipping cream
12 ounces semi-sweet chocolate chips
3 ounces espresso or strong coffee
4 tablespoons butter
1 teaspoon gelatin
Method
- Chill the 1 1/2 cups of whipping cream, mixing bowl, beaters in the refrigerator. Double boil the chocolate chips, coffee and butter. Melt over and remove from heat while a couple of chunks are still visible. Cool, stirring occasionally to just above body temperature.
- Pour remaining 1/4 cup whipping cream into a metal measuring cup and sprinkle in the gelatin. Leave for 10 minutes and then carefully heat by swirling the measuring cup over a low gas flame or candle. Do not boil. Stir mixture into the cooled chocolate and set aside.
- In the chilled mixing bowl, beat cream to medium peaks. Stir 1/4 of the whipped cream into the chocolate mixture to lighten it. Fold in the remaining whipped cream in two doses. There may be streaks of whipped cream in the chocolate and that is fine. Do not over work the mousse.
Chocolate Brownies
Ingredients
6 tablespoons butter
2 ounces unsweetened chocolate
1/2 teaspoon vanilla
1 cup granulated sugar
2 large eggs
3/4 cup all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon salt
1/2 cup chopped pecans or walnuts
Method
- Heat oven to 325°. In a saucepan over low heat, melt the butter and chocolate, stirring constantly. Remove from heat and let cool.
- With a whisk, beat in the vanilla and sugar. Whisk in eggs, one at a time, beating well after each addition. Stir flour, measure into a small bowl, and stir in the baking powder and salt, blending well.
- With a wooden spoon, stir the flour mixture into the first mixture. Stir in the chopped nuts, blending well. Spoon into the prepared pan and spread evenly. Bake the brownies for about 25 minutes.
Chocolate Melt Lava Cake
Ingredients
6 oz. Semi-Sweet Baking Chocolate
6 oz. Butter
3 Eggs
1/2 cup Sugar
1/3 cup Flour
Ramekins
Method
- Preheat oven to 350°F. Melt chocolate on low flame in a double boiler. When melted, take of flame, and stir in diced butter, until it melts. In another bowl, beat eggs and sugar, until it starts to whiten. Stir in melted chocolate and then the flour.
- Butter 4 individual ramekins, and pour in chocolate batter.Cook for about 10 minutes.
- Goes best with Vanilla Ice Cream.
