Hot & Spicy Noodle Omelet....

Breakfast is the most important meal of the day. It gives you the energy to carry out your work and refill the nutrient content in your body which was used up while you were asleep. Breakfast should always be a healthy, wholesome and a very inviting one. I like my meals to be hot. And a  good hot meal with spices and right amount of ingredients is always inviting and mouth watering to me. Today I tried this recipe which is a creation of mine and it was actually very delicious. I wanted to have eggs but there were no bread in the house so I tried it with some noodles. You can adjust the amounts given down here according to your choice. Here goes the recipe. 
Hot & Spicy Noodle Omelet....
Ingredients
100g of plain wheat flour noodles
2 eggs
1 medium size onion
2 dry red chili
1 green chili
75g of white cabbage
50g of leek
50g of carrots
some curry leaves
a pinch of salt
2 tbsp vegetable oil
water to boil

Method
  1. Firstly take a  shallow pan or a wok and boil the water and add the noodles, keep  it for 2 minutes and sieve and keep it aside. To the same pan you used add 1 tbsp of oil and let it get hot.
  2. Add 3/4 of the onion,curry leaves and the red chili and temper. Then add the vegetables and let them get soften while stir frying. After 4 or 5 minutes, add salt to taste.
  3. To a bowl get the eggs, the remaining of onions and the green chili and a bit of salt and whisk them for a while until they mix well. To another pan add a bit of oil or you can use your non- stick pan and then add this mixture as you do in making omelets.
  4. When the under side of the omelet turns a light shade of brown, add the noodle mixture on top of the omelet and spread. Then fold the omelet into to and seal it. Serve hot.
