Christmas All The Way.... X'mas Recipes

Sorry people for not being in touch with you for a time. So back on air with loads of fascinating ideas for new creations and stuff. It's Christmas and everywhere you go you can smell it and see it and even experience it. We talked about main items that we usually have on our dinner table on Christmas day plus Christmas servings we have usually have. So today we will talk about some festive food recipes that goes with Christmas.Christmas time means full of guests and parties at homes. All of us like to get together and enjoy a good whole meal with our family so why don't you try some fatty recipes??? I hope you like these. 



Roasted Garlic and Oregano Chicken Recipe

Ingredients
4 bone-in chicken breast halves, with skin
4 teaspoons olive oil
1 teaspoon dried leaf oregano
4 medium garlic cloves, mashed and finely minced
1 teaspoon salt
1/8 teaspoon ground cayenne
dash black pepper

Method

  1. Heat the oven to 450°. Prepare the baking pan with a cooking spray or butter the pan. 
  2. Wash the chicken breasts and dry. Combine the olive oil, oregano, mashed minced garlic, salt, and cayenne and black peppers. Stir to make a paste; spread some under the skin of the chicken and the rest over the skin.
  3. Arrange on the baking sheet, skin side up. Roast for 35 minutes, or until they register about 165° in the thickest part of the meat without touching bone.
Baked Tuna Recipe

Ingredients
2 thick tuna steaks (at least an inch thick)
4 cloves garlic, chopped
2 or 3 sprigs of dill
1 large onion, diced
1 yellow pepper, seeded and chopped
1 red pepper, seeded and chopped
1 green pepper, seeded and chopped
1 jalapeno pepper, halved, seeded and finely chopped
1/4 cup extra virgin olive oil

Method
  1. Preheat oven to 350°F. Cover the bottom of baking tray with few inches of aluminium foil and leave a large part of it to over lap.
  2. Evenly distribute a few tablespoons of olive oil in the tray. Cut the tuna almost in half horizontally, leaving an inch or so to hold the fish together.
  3. Evenly stuff each steak with a diced clove of garlic in each. Place steaks in the tray. Evenly distribute onion, peppers, jalapeno pepper and garlic into the tray, covering the steaks.
  4. Place a sprig of dill on top of each steak. Drizzle remaining olive oil over the steaks and the veg. Fold the foil over the tray being sure to cover tuna and loosely tuck it in.
  5. Place in the oven for about 40 minutes, for thicker steaks about 45/50 minutes.
Roasted Duck Recipe

Ingredients
1 kg Duck 
3  one inch pieces of Cinnamon
4 Cloves
1 tsp Pepper
A pinch of Turmeric powder
2 glasses of Water 
2 tbs Ghee 
2 tbs Oil 
2 Tomatoes 
1 or 2 Potatoes 
A Few Ladies Finger

Method 
  1. Grind clove, cinnamon, pepper, turmeric powder and salt. Clean the duck. Marinate the duck both inside and outside with the ground masala for 1/2 an hour.
  2.  Fry the duck in a pan in ghee and oil. Turn over the duck and fry till light brown. Boil water and pour it over the duck. Close the pan with a lid and cook till done. There should be enough gravy.
  3. Fry the ladies finger and sliced potatoes in oil adding salt and a little gravy from the duck curry. Slice tomatoes breadth wise. Decorate the duck roast with the fried ladies finger, potatoes and tomatoes.
Baked Caramel Cheesecake Recipe

Ingredients
Melted butter
1 x 250g pkt butternut snap biscuits
125g butter, melted
3 x 250g pkts cream cheese, at room temperature
1 x 300ml ctn sour cream
100g (1/2 cup) caster sugar
3 eggs
1 x 380g Nestle Caramel Top 'n' Fill

Method
  1. Brush a 24cm (base measurement) springform pan with melted butter to lightly grease. Place the biscuits in the bowl of a food processor and process until finely crushed. Add the butter and process until combined. Transfer to the prepared pan and press firmly over the base and side. Cover with plastic wrap and place in the fridge for 30 minutes to chill.
  2. Preheat oven to 160°C. Place the cream cheese, sour cream and sugar in the bowl of a food processor and process until smooth. Add the eggs and process until well combined.
  3. Pour half of the cream cheese mixture into the biscuit base. Top with caramel. Pour over remaining cream cheese mixture. Bake for 1 hour and 10 minutes or until set. Turn oven off. Leave the cheesecake in oven, with the door ajar, for 2 hours or until cooled. Place in the fridge for 4 hours or overnight to chill. Cut into wedges and serve.
