Sri Lankan Style Devilled Eggplant

Hullo everyone! Sorry for not being in touch with you because of my burnt power pack. Still, I wanted to share an amazingly delicious dish my mother prepared today which is actually eggplant! So with the taste in my mouth and recipe in my head here is it is. Hope you try it and taste it becuase like it did to me, this dish will definitely bring some difference to your meal.

Sri Lankan Style Devilled Eggplant

Ingredients
500g washed and julianned Eggplant
2 capsicums cut into slant rounds
2 well ripen tomatoes
2 green chili cut into twos
Oil to deep fry
Salt to taste
1 teaspoon chili flakes
1/4 tbsp tumeric powder 
2 tbsp sugar
1/4 cup tomato sauce
2 tbsp soy sauce 
2 tbsp chopped onion and garlic
Some curry leaves
Some chopped spring onion to decorate

Method
  1. First, in a bowl mix the tumeric powder and some salt with the eggplant. Set aside for five minutes and deep fry until golden brown. Drain oil well.
  2. Then heat a pan with 2 tbsp oil and add the chopped onion, garlic and curry leaves. When you get the smell of onion frying add the capsicums, green chili, chili flakes and eggplant.
  3. While mixing, add the tomato sauce and soy sauce and taste a bit and add salt if necessary. Finally add the tomatoes and sugar and turn off the heat. 
  4. When about to be served sprinkle spring onion and serve. Tastes best with rice, bread and naan.
